In search for yet… another recipe

A food that often reminds me of my childhood is ukoy. I spent a lot of time at my maternal grandparents’ home growing up. My parents worked and my grandparents often watched me, along with a number of my cousins. I think I’ve mentioned this before, but there would be big meals EVERY Friday with whoever could make it in the area. We’re talking no less than 15 people EVERY Friday! My grandma wasn’t such a great cook but when she did make certain things, I was sure to remember.

There were 3 things that she could make, that rocked my socks: ukoy, her banana fritters, and carioca. My mom swears my grandma didn’t make the carioca tho. I still says she did tho and keep it at that. Unforunately she never shared her recipes with anyone and back then I was far too young to even care to be in the kitchen to watch her with her “magic”. So now I’m on the search. The search for just the right ukoy recipe. I know I can buy it already made, and in fact we did just that today but it’s far too expensive not to learn. I mean shootz the bakery was selling 1 ukoy for $2.49 and it wasn’t even all that great. Pfft. So like my lumpia shanghai that I have mastered to a T, I’m going to do the same with ukoy!

In fact my old college roomie’s mommy has a damned yummy recipe. Actually her family’s recipes for quite a few things are quite yummy! But I only asked for the ukoy recipe via email just yesterday. Lol. Here’s hoping she shares the love.

Of course googling recipes for ukoy gets a lot of variation, but not quite what I’m looking for. And woo boy I never knew that you could put tofu in it. What an interesting twist! I know for sure I want sweet potato, bean sprouts, green onions, and onions in it… it’s just the batter. I got to get it just right.

Oh and in case you were wondering, ukoy is a fritter of sorts, normally made of veggies and often times with a shrimp in it. I actually don’t care much for the shrimp. And yeah it’s served with a yummy dipping sauce of soy sauce, vinegar, and a little garlic. Mmmmmmmasarap!!!!!!!!!
